Which MCAT date?

Alright guys, I have basically everything in order to apply for this upcoming cycle, except for taking the MCAT itself.

Should I take the April 23rd one and get my scores back a few days before submitting my primaries, or take the May 6th one and get my results back on June 7th, or does it not really matter either way?

OP, I would say it matters if you'll need those extra few weeks to study. Are you currently taking classes and expecting to have finals the week before the May 6th test date? For the purposes of submitting your primaries, you can submit with one school on June 1st and add the rest later (the 7th in this case) when you know your scores. No harm, no foul because your application will more than likely still be in line for verifying.
 
It doesn't matter which one of those you take from an application standpoint.
Personally I'm a big proponent of taking the earliest MCAT you will be fully prepared for.
