send emails and update aadsas saying your application is complete, while other schools say they're still waiting on either your DAT scores/ LOEs?? You only get one updated mailing date so shouldn't they receive everything around the same time as the other schools that say you're app is complete do?

Some schools are more on top of things than others. Some schools will update and confirm everything right away, while others may never even bother updating AADSAS. It just depends on the school. But if one school says they received your application, they all did.
