Will Having my LOR in late delay my interview?

So I have my Application and transcript submitted, but sadly my school does committee letter and am worried it will be in late. I had my 3 letters turned in to the committee in may, but the committee adviser always interview everyone she write a committee letter for. Unfortunately, I am really far away doing an internship at another state. She refuses to do the interview by phone so I have to wait till the end of august when school starts to have the interview which sucks. This is only confounded by the fact that she will probably be writing a lot of letters at that time and probably wont have my letters in till September. I seriously hate my school atm. My question is that does this ruin the fact that i submitted everything else early. As in am I still considered early? Will this hurt the time i get interviews?
I Am considering 3 options:
1. I will inform my professors to send amcas my letters of rec. directly along with the cover letter so I can send med. schools the individual letters. (what I think is the best option ATM)
2. Wait till late august....(August 18 at the earliest just to have the interview)
3. Fly home and have the interview. (expensive option since I would have to take leave from work and pay for the flight...approx total cost: 400-500 dollars)
 
any advise on what I should do regarding the situation? Should i just ask my professors for individual letters?
 
Tell your writers to submit individually. Most secondaries have a prompt to address why you are not using a committee letter, just explain the circumstances in that. You can add the committee letter to your schools whenever it is ready.

Just FYI some schools have a hard requirement for a committee letter if you are a traditional student (BU comes to mind).
