Would this be Rule-Breaking?

I asked a physician I worked with to write a letter of rec, but they were unable to at the time due to their schedule and it was not a big deal. I just modified my AMCAS to say it was no longer being sent.

However, they now have some unexpected free time, and would be happy to write it. After considering it I realized I only need the letter for one or two schools that want a letter from a significant work or volunteer experience. The letter probably will not have letterhead, which may create headaches at other schools, and while they will say some incredibly nice things about me I'm not sure if it will be up to par with my academic letters. Finally I didn't list the organization she was associated with which may create confusion.

My question is, if I create a "new" letter for them under AMCAS with a new letter ID, and just send it to that one school am I breaking any AMCAS rules? Sorry if I am being neurotic, but don't want to get in hot water for something that may not be a big deal.
