I'm having trouble understanding how the graphs show a 1:1 mole ratio...I don't get this concept. Would really appreciate any clarification!

Equivalence point is in the middle of the steep part of the curve which lines up with the 1 molar ratio on the x-axis.
 
Equivalence point in MCATspeak is the point at which moles of titrant (substance added) = moles of analyte (substance that titrant reacts with). As the above commenter mentioned, the eq point is at or near the inflection point of the curve.
