Can programs see how many and what programs you've applied to thru NRMP?

Nope. After the match, if a program ranked you on their match list and you didn't match there, they can see where you matched. You may have interviewers ask you where else you are interviewing (although they aren't supposed to). Also, program directors may find out where else you are interviewing simply by talking to other PDs (especially if you are applying to 2 different specialties in the same hospital).
