From my study material it says it's important to be familiar with common monosacharides such as D-Fructose, D-Glucose, D-Galactose, and D-mannose. Are those the only ones one needs to know?

Those are the important ones to know for content review, and you should be fine knowing just these four. Information about other monosaccharides (or sugars) will likely be provided to you in the passage or question stems.
 
My book listed those four plus ribose as the ones to know cold. There were passages and questions with other monosaccharides, but if you knew those five you could get the answer by poe.
