Help with school list? Okay numbers (3.91/518), but meh ECs

Hi, long term lurker here. I've been trying to research how to make a school list, but I'm feeling a bit lost on how to eliminate schools because my numbers are okay, but my ECs are pretty weak and I was a transfer student (not sure if this matters). At this point it's rather difficult for me to improve on any of my ECs and shadowing because I'm living overseas and will be here for awhile. I'm on my second gap year right now.

Anyways, I would appreciate any input or guidance, thanks!

CA resident. Graduated from a UC (transferred from a cc because I graduated high school earlier than expected)
GPA: 3.91
MCAT: 518 (129/130/128/131)
Volunteering: Schools, hospital, hospice, homeless shelter, Girl Scouts, orientation committee for incoming newbies in the overseas teaching program
Research: 2 years evolutionary bio lab
Work experience: tutor (1.5 years) , pathology lab technician (1 year), currently teaching overseas
Shadowing: 40 hours at a family practice

Since you are a CA resident you need to add more OOS private schools such as:
Hofstra
Einstein
Drexel
Temple
Jefferson
Georgetown
St. Louis
Medical College Wisconsin
