FA explains that to reduce confounding bias, you can do a crossover studies to set subjects as their own controls. Can anyone explain this further? How can your subjects be their own control and how does this reduce the confoudning bias?

I think it means that they are in the control group and then the experimental group which allows you to see if the change is truly due to the intervention or not.
