Assuming we're already verified and submit secondaries within 3-5 days of receiving, when is the earliest interview invites start rolling out and what's the earliest that actual interviews begin to be conducted?

Trying to plan a trip (not for leisure, family issues) and it's looking like August/September could be problematic.

This question assumes you will be completed with secondaries prior to September and my long experience finds this patently false. Most applicants are still struggling with secondaries in September and October

1) Applying to medical school is s full time job from May thru September at least if not October and is on call thru next March
2) it can take 1 day to 3 months for a school to send secondaries. This can be due their internal intake process (after primaries are received from AMCAS), or intentional control / throttling in order to have steady application flow for evaluators, reviewers and the committee to work through, or a variety of other reasons.
3) applicants woefully underestimate the time and effort it takes to craft good secondaries even if the “adversity/diversity” questions are similar. Some have 500 word essays some have 500 characters. Simply cutting and pasting reads exactly like that and does nor impress.
4) applying to medical school is as much as reducing risk as anything else. Going on a trip during this timeframe is a risk fully under your control. You now are introducing another small but above zero factor into a highly competitive process.

How long does it take to write a good secondary (assuming the secondary is of average length)?

If you pre-write before applying, no more than 1 day IMO per 1000 characters (my estimate). It is a written interview. Regardless, your goal is to turn it around in 7 days.
