Interview trail -Thank you letter questions

Having interviews that involve traveling 2-3 days a week and fitting in clinical work the rest of the week means I'm behind with my thank you letters. Would sending out thank you emails a week after the interview be terribly bad? (Please say no And, when my thank you emails get a response wishing me good luck, should I send another "thanks"?
