I just saw that you don't have to submit your AMCAS application with the letter of recs, but when is the actual deadline? I've been doing some research and I can't find a firm answer ...

I'm not sure if there is a deadline for letters in particular. I will say that you once you obtain and submit secondaries, you will not be considered complete until your letters are received.

The earlier you get them in, the better.
 
The deadline would be the same as the school-specific deadline for secondary applications. However, you really shouldn't be submitting anything anywhere close to the deadline. Try to get your AMCAS submitted in June, secondaries submitted in July/early August. That means your letters should be submitted by early August as well. Admissions are for the most part rolling, so having your application complete early gives you the best shot at getting an interview and being admitted.
