When applying to residency, if an article is in the stages of being published are you still able to list it with the stipulation that it is still being processed? Also if you were acknowledged on a paper for contributing but were not list as an author (politics within the university 🙄) is that something that can be mentioned or is it meaningless?

If the article was accepted then you can cite the publication with the journal it was accepted to and in parenthesis state "accepted" or "in press" which are two separate stages the the publications.

I would not cite publications in which you are only acknowledge. It is not appropriate.
