How do these type of schools educate differently? In terms of residency, is there a limited number of specialties people generally get from going to these type of schools?

1) Some might encourage or require community service during the med school years, but for most it's optional. I am not aware of educational differences.

2) No. Their students match into any specialty. There is no limitation.

You'll often see these programs have their primary teaching hospitals serving low-income communities with disadvantaged patient populations. I'm at one of those schools. We have a student run health center that serves one community and I spend one day a week going primary care at a community health center. Our 2017 class matched broadly into everything from plastics, ortho, urology, ophtho, rads, etc.
