Not going to medical school for a year? Defer?

Hey, I have already taken my MCAT and applied to medical schools. I have only filled out two secondary applications so far. I have a 3.96 GPA and got a 12-9-10 on my MCAT. I am applying to a few schools in the area including OHSU and University of Washington as well as some other private universities that I have ties to. I have recently decided that I would like to wait at least a year before I go to medical school. I want to study Spanish abroad and work. Should I just not continue with my applications and eat the $600 that I have paid? Or should I try and defer after acceptance? Would not finishing the application hurt my chances in a year or two?

I am only 21 and finished college in 3 years.

Since you've already paid and applied I'd go ahead with interviews. Deferment policies differ by school. I know a couple of people who have deferred to work abroad with no problems.
