With the new MCAT, it just seems like all the material is really advanced. Is a freshman bio class really able to cover all of that?

You will definitely want to take a biochemistry class because there's a heavy biochemistry focus in the biology & biochemistry section of the exam. Some other upper class biology classes that might help are genetics and physiology, but they're not nearly as essential as biochem!
