Should I apply for a 4 year institution?

I am an engineer and want to go to medical school. I will be finishing my pre-req science classes in a year. Then I'll take the MCAT and apply for medical schools. While waiting for the decision, I plan to apply for a 4 year university to take more upper division biology classes in case I am rejected. I will be taking classes through open-university program which I have to try to add to the class on the first meeting day. Being a formal student at a university will save me money and give me priority registration. Will it hurt if I enter into an undergrad Biology bachelor program knowing that I won't be finished?
