When did you do research before fellowship?

I just started my 3rd year of medical school with general surgery clerkship and was able to sneak into a few ORs performing GI procedures. It's something that I've become interested in. I know it's pretty competitive and research is something that a lot of people that match into GI have. I was wondering when did everyone do their research? Undergrad? Med school? Residency? Took some time off?
