I know that theres a 10-minute break in between each section. But what happens if I were to take longer than that 10 minutes to return to my computer on test day?
 
It will just open up to the screen where it says for example: Verbal Section 60 min with the Directions and you have to press Next to actually start the test. It's not going to start the timer unless you click Next.

I took LONG 15min breaks to help calm my nerves!

I wouldn't risk doing this for the reason SN2 said. An extra 5 minutes isn't worth a voided test.
On my breaks, I went to the bathroom and ran in place for a few minutes.
 
My test center had you sign-in and sign-out whenever you left the test room. And each time they let me know "you need to sign back in by..." I guess it depends on the test center though.
 
Don't purposely come back to a break late, but if you do happen to come back a bit late don't panic about the timer starting again. I was waiting in line to sign back in to get in for the verbal section the first time I took the MCAT and got there a minute or two late and saw the screen change to the verbal instructions and the timer never started. I freak out and ended up not doing well that sitting but, moral of the story - stay calm, be on time, use your break, be confident.
