I'd recommend brevity. If the interviewer needs more information or feels the need to ask more questions about the activity, the interviewer will ask. We have a limited time to conduct the interview and we have quite a bit of ground to cover. If you talk too long, there is less time for a follow-up question or the opportunity to move on to other areas of inquiry.
 
Thanks for the advice @LizzyM . I agree with you 100%, but I also felt that led me to underperform as my interviewer seemed to have no interest in any follow-up questions for my activities. He just asked, "Alright so tell me about this activity", I gave a brief overview, then he just moved on. As a result, I felt disappointed because I was unable to fully convey my passion which led me to ask here for advice. Would you say this is an exception to the norm?
You need to get over this. When asked a question, just answer the question. Your natural passion will shine through if it's really there.

The interviewer may be assessing your language skills, your ability to get to the point without rambling, to test whether you can explain things in a clear and concise manner without using jargon. The interviewer may be listening for empathy toward those you worked with versus pity or dissociation (not even considering the "cases" as human beings) , intellectual curiosity vs boredom with tasks you've been assigned, and maturity in your outlook.

Or perhaps the interviewer just didn't give a fig and had already decided to recommend you for admission and was just going through the motions of interviewing you so he could get a drink when it was over. (worst case scenario but I don't doubt that it happens)
