Have you done any networking at recruiting events, open houses, AMSA meetings, or admissions events at any of the medical schools of interest?
I’ve been to a WMU open house and was an active AMSA member at my school. I’ve been to a few AMSA conferences as well. Not sure if I should add that to my app. And with networking, I’ve met people representing med schools at AMSA conferences before but not sure how that’ll benefit me?

Have you asked the med student AMSA members you met if they think you should include it? You can ask them about resources they think would be very useful for you as an applicant. AMSA has this entire premed section (as you should know).
 
I think getting admitted into med school shouldn’t be an issue.
