You are a career changer. Aside from shadowing, what experience do you have dealing with the sick, injured, or dying or patients just seeking preventive services? How do you know that you want a career in medicine?Have you done anything non clinical to help others over the past decade?

Shadowing in the past year and some paid experiece as a caretaker for the homebound (people not related to you) will count for something.
Not sure why the second bachelor's degree. If you've already applied this cycle, you've got some sunk costs. If you can really afford to take a 20% salary cut in order to get clinical experience, that would be something to talk about during interviews (if you get any).

One thing to keep in mind is that if you have to reapply, ADCOMS will expect significant improvement in your application! They will elect you to fill in the holes. It really sounds like you have a ton going on in your life. It is usually suggested that you consider your application cycle as a full time job and focus on it. Good luck!
Of course they do and go to school too! But if you have lots of obligations frequently something doesn’t get done! And interviews haven’t started and how are your secondaries coming along. It’s just a lot to do.
