You have a fantastic application and your list is appropriate. You can add any other top tier schools that you want. Columbia, Hopkins, NW?

Sorry to respond so late.

Instead of adding schools, I'm actually considering removing the schools that heavily emphasize research experience. (ie. Harvard, Stanford, Duke)

This ties into another concern I have about my app. I think my EC's really don't compare much to the average matriculant at many of these schools, especially the duration and variety of clinical and research experiences. Most of those included occurred in the past two years (because that is when I initially made a hard dedication to medicine). If you took away the GPA/MCAT, I feel like my app is average at best. The more I look around, the more discussion I see indicating that stats only really get the application looked at, but everything from then on out is based on your EC's.

I feel like the list I have now is too top-heavy and, for financial reasons, I would really like to adjust it to include schools that fit my standings EC-wise.

But maybe I'm just being neurotic or dealing with some sample bias and overrepresented extremes (Please tell me this sentence is true, lol).

You're underselling yourself frankly.

You really have a great application as is. You're concerns about volunteering hours might be more valid if there wasn't a pandemic going on. Its really hard to get in to volunteer places right now (at least from what I've been seeing). I might add a few more lower tier schools just to be safe, but that's just cuz I'm neurotic haha.

I think you just need to focus on your essays, and tell schools about yourself, your journey, and how and why you want to get into medicine. If you can do that the interviews will come! Either way good luck!
