Remove Wake Forest, MCW, Indiana since they will "yield protect" with your stats. You could add any of these schools:
NYU
Columbia
Cornell
Mount Sinai
Harvard
Yale

Do you think my EC's are strong enough for the T20s?

The hours for the EC's are minimally acceptable. If you wanted to shoot for T20's, I think you should have more (at least 2x). Of course, if the OP believes the EC's aren't spectacular, they probably won't be spectacular to reviewers. The teen homeless shelter is worthy of attention, but I'm not sure if that's enough on the leadership front (by itself).

As I finalize my school list, I thought I'd post it here for last minute feedback/suggestions.

UCSF, Stanford, UPenn, WashU, UCSD, UCLA, Michigan, Emory, Kaiser, Northwestern, Case Western, Vanderbilt, Mount Sinai, NYU, UPitt, USC Keck, Ohio State, Cincinnati, Hofstra, Virginia, USF, Wisconsin, Western Michigan, SLU, Colorado, Iowa, Creighton, Tufts, University of WA, WSU

Additionally, I am planning on working as a clinical research coordinator in the hematology oncology department over my gap year, through which I will gain more experience in cancer research and care which is an integral part of my application.
