I think this is fine as a hobby. If you're passionate about it and would want to actually discuss in an interview, go ahead.
 
At least 2 years on and off I’d say? But I was told that, on AMCAS, hobbies are either to be listed as having “0 hours” or “9999 hours”
I don't think that's correct.
If you spend say 2 hours a week on it, make an estimate
 
I agree, I think you can make a reasonable estimate for this hobby. It is not like how some applicants had started playing an instrument or a sport at an early age many years back.
 
I think this is cool.

I've had a LONG TIME hobby of being on various forums and helping people (programming, fitness, more programming, gaming stuff, more fitness, mental health & mentoring, computer repair & building)

There's 0 way I could calculate 20+ years of it all so for my situation I would put down 0hr if I have any room in my app or feel it's worth it outside of just a casual mention.
