I took two years off during undergrad to deal with a mental health issue. What's the best way to go about this?
Are you applying and looking to address this in your writing, or are you looking at returning to school?
 
I had a similar gap in the middle of my undergrad due to some personal circumstances and I addressed it in my secondary essays and interviews as an opportunity to develop resilience and grow. It's one of those things the committee will see on your app anyway, so just be honest about how you grew as a person. It could be a good way to segue into how resilient and compassionate it has made you.

For returning to school, I think I just reached out to admissions and asked the best way to return to my program. If you left between semesters (i.e. finished your courses) I don't think it should be extremely difficult, though if you had to leave without giving much notice it may be a bit more work. A friend of mine vanished in the middle of the semester and needed to file a formal petition explaining the circumstances to return, which was approved since it was a mental health thing as well and they were sympathetic. I imagine that is the process at most schools.
