More is always better. I personally went with almost 30. Most formal postbaccs will have around 30 credits, whereas the only school I saw with an official postbacc gpa-replacement policy required 20 credits in order to replace (Wayne State).For the DIY post-bacc, how many classes exactly should I take? I was thinking a semesters worth, under 12 credit hours?
You may need fewer hours given your background, but my general advice would be to take as many classes as feasible until you are ready to apply. If you only want to wait one year, that's totally understandable...but take classes both semesters between now and then. You want to demonstrate that you have matured and are ready to perform at a high level from here on out. One semester could be a fluke, or a short burst of effort.
