cGPA: 3.3 sGPA: 3.3 (Both can rise to 3.4 by the end of the semester - realistic for total, maybe for Science)
MCAT: 516 (129/127/130/130)
State: NJ
Race: ORM
Clinical Exp:
Research Exp: 1500+ hours, 2+ years, 1 posters (Maybe 2 pubs in progress)
Shadowing: 120-150 Clinical Rotation program (ED, Surgery, IM), 15-20 hours at private DO practice
Non-Clinical Volunteering: 50+ as a tutor for underserved kids, ~100-150 hours from Service Club (maybe more?)
Other EC: 3 clubs (Service, Research and one for fun), leadership in 2

So, first, I know my Clinical Exp is lacking (only have shadowing) , so I have tried to address that by applying for scribing positions in my region. Should I do that for part-time and do some volunteering as well? Or Should I just do it full-time?

You are fine for all the DO schools on your list. You have several state public schools on your list that accept very few non residents with your GPA so you remove those including Virginia Tech, U Arizona, Toledo, SUNY Upstate, Michigan State, Florida State and Central Michigan. You could add these schools:
Vermont
Temple
Jefferson
George Washington
Oakland Beaumont
Western Michigan
NOVA MD
California University
any new schools that may open for 2019 (Kaiser, Roseman)
You should accumulate 200+ hours of clinical volunteering before you apply.
 
Would the scribe job count? Or do I need the clinical volunteering specifically?

I agree with Faha. Delete Va Tech but all EVMS

I'm sorry I don't quite understand this. Did you mean add EVMS? So, you mean I can still apply to Va Tech but not to EVMS? Thank you for your help. Highly appreciate it.

Also, I did have a question. Would a post-bacc be needed for me or would any clinical position for a gap year help my chances for a MD? (Mainly thinking about RWJMS)

Yes, add EVMS. Scratch Va Tech...too small and quirky and they have an affinity for people from the rural Appalachians, it seems.
