At a minimum, shadow a primary care doc for 30 hours before you submit.
Utah expects 500 hours of community service. Of those UColorado accepts, 75% had another career first. They prefer to see 500 hours of clinical exposure (though don't explicitly say it's required). Brown has historically accepted mostly applicants from their region; plans were in place to generalize their acceptances, but I don't know if that started yet.
Otherwise, I think the list is fine.
Working with senior citizens in a lab setting may well be looked at as clinical experience also, so you're not as weak as you thought. Emphasize that component in your description.
