My score went from an 8 in verbal to double digits after a few months of test prep. My advice would be to apply and do everything you can in the application to give yourself an advantage (i.e. apply early, stock up on volunteer work at a hospital, etc.), and keep studying for the MCAT. It's hard work, but you can go up a few to at least 8. Take it for what it's worth to you. A higher MCAT score instantly boosts your application and schools tend to be a little more generous to reapplicants, so you would have both a higher score and sympathy the next time around if you're rejected. This way, you can hope for the best, expect the worst, and prepare yourself for everything.
Good luck to you.
