A bit confused about interfolio

Does anyone else's school use intefolio for letters of recommendation? I was just watching the AMCAS tutorial for adding letters and I am a bit confused as to what interfolio exactly does? Is it to skip the letter request step? Thanks in advance.
 
Your letter writers send your LORs to Interfolio instead of AMCAS. This allows you to hold the confidential letters in case you need them in the future... Whether you have to reapply or are applying to some outside scholarship that wants your med school LORs.

You can then request your letters be sent to AMCAS by using the Interfolio website.

Read above for some good info, another very common reason to use it, is if you have an opportunity to ask for a letter your sophomore year (and you won't have anymore classes/interactions with your letter writer after that), then you can do so right then and there and hold your LoR in Interfolio, because otherwise you'd have to come back a year later and the letter writer might not be able to write as good a letter then.
 
Also, if you apply to DO schools there is no letter holding service like AMCAS has. Your LOR writers would have to send copies to every DO school you applied to, if you didn't use Interfolio.
