I'm going to be a sophomore pre-med student who has four years left at my university (I'm an athlete, that's the main reason I'll be at undergrad for 5 years), and recently reached out to one of my professors to see if I could assist in some of her research. I was hoping for some solid and guided experience that I would be able to put on a resume, like X hours researching X subject (I realize this is very oversimplified). Instead, my professor wants me to essentially choose an expertise, and conduct my own research. I like the concept of this a lot, but there are two things that I'm questioning. Will the research I conduct, which more than likely will never be published or used for much, still be admissible by admissions at a med school, will it still look good? I don't want to be pessimistic but I'm just being realistic. Secondly, is there a possibility I'd have to self-fund certain things used like cells or mice for example? I'm just making an assumption that my university likely will not fund independent research, but I could be wrong.
Thanks in advance.

Independent research definitely still counts. I can't imagine that you'd be expected to fund any major research yourself. My guess would be that whatever topic you choose will have to be something relatively basic that doesn't require a lot in terms of materials/resources. Perhaps your professor has pre-existing data that you may be able to use to develop your own project?

In any case, yes, medical schools will still consider this research. The goal is for you to learn about the research process. Publications are great but they're not going to make or break your acceptance.

Yes. The goal is that you learn something about the scientific method. As the wise DrMidlife says: “you've preferably had some exposure to research so you can be convinced that Wakefield used malicious dirtbag methods and is not the savior of the world's children.”

No! Your PI will provide everything.

The professor likely has access to training funds, which can be used to get you started.
