They still consider applicants without a certain pre-requisite and can invite those people to an interview, but once you get accepted, you are REQUIRED to complete that missing pre-requisite before matriculation.

Like what was said above, schools will still invite you for interviews, but you must complete the pre-reqs prior to matriculation. Unfortunately, since you graduated it will be a pain to go back to school and take those classes (I'm in the same boat with UMich). I would tell you to take any classes you need at a CC, but some schools don't accept pre-reqs from a CC so be sure to check up on that...
