do most schools allow accceptees to take a year oofff before matriculating?

I don't know how many, but I do know that some schools will let you defer your acceptance for a year. But you usually have to have a good reason, and even with a good reason they may not let you defer.

what is considered to be a good reason normally?

I would imagine it's something unexpected that you didn't have prior knowledge would occur before applying. From what I recall in past threads when this has come up, schools aren't too generous with allowing students to defer without it really being a substantial reason.

Probably not wanting to take a break and sit on your butt. You have to be doing something productive and/or a once in a lifetime type of activity. The wording of most schools' policies makes it seem like they aren't commonly given out when requested.
 
Our school had a really strict policy. Then they overaccepted and invited people to defer for not so good of reasons. Then they still had too many people, so they started paying people to defer.

But they'll probably go back to the really strict policy this year 🙂
