Watch out for the AAMC practice tests. Tests 1-4 (the only ones that were available when I studied for the MCAT) were very different from the MCAT I took in August 2000. On the practice tests I would miss 1-3 questions on the verbal sections and would finish the sections with about 35 minutes to spare (giving me time to check all of my answers). On the real MCAT that I took, the passages and questions were much harder. I had to guess on many questions and filled in my final bubble just before the time was up. When I got my scores back (65 days later) I was relieved that I got an 11 (which was lower than any practice test I took - AAMC, Kaplan, Berkeley Review). The other major difference in the test that I took was that the organic chemistry questions seemed much more difficult than on any of the AAMC practice tests.
