One of the schools I applied to said that the AAMC VITA will be used as a supplement to my real interview. I was wondering if someone could clarify what this may mean?

It probably means they look at your VITA along with your "real interview." What else would it mean?

Probably means you have to complete VITA in addition to a normal interview. Both will have an effect on your admissions decision. Think of VITA like Casper.

If they said the actual interview will be the highest priority, does that mean the VITA will matter less?

Yes lol. In general, supplemental materials like VITA and Casper matter less than the actual interview (unless you apply to Canadian schools, where Casper is more important than at US MD).
