I am planning on taking anatomy online in the Fall but I haven't signed up for the class yet and i'm also still not too sure which online school I am going to take it at, thus do I not mention it at all as of right now in my academic coursework? Or do I have to find a school and then put it "as planned"?

You don't have to mention it. Things happen and people don't always end up taking the classes they say they will (which imo is way more stressful for an applicant to worry about). It would help to include it if you're applying to schools that have it as a prerequisite, but if not just include it in the AU after you get your grades (December).
