If I was acknowledged in a publication, but not authored despite large involvement in the experiment, should I still put it as an achievement, or would it be dishonest to do so?

You can describe it however you want. It's not being dishonest unless you actually claim to be published.

No one could stop you, but this isn't going to move the needle. That said, this isn't really worth taking an activities spot.
