So an admissions committee member for one of the schools I am applying to is visiting my university next week. Would going to a meeting like this improve my chances of getting an interview?

Unlikely -- But is that a chance you want to take? Avail yourself of every opportunity. Come up with some insightful questions to ask in the Q&A session. Ask one of them - whichever was least covered. Then after the introduction, introduce yourself, say how much you enjoyed the presentation, and mentioned that you applied there and are really hopeful you will get an interviewer.
Extremely unlikely to hurt. Small chance it will help --
I agree that you should go, although that interviewer is not going to shake your hand and decide to pull your application for an interview because of it. You can ask them questions about their selection process specifically. I know SDN is a great resource, but every school (and every adcomm) has their own philosophy and their own specific way of doing things. Plus, maybe this person could end up being the person you interview with later on, then you can say, "Oh hi Dr. XYZ, we met briefly before when you came to my school."

OP, do this, and try and work in something along the lines of:
"I was excited to apply to X School of Medicine and remain hopeful to receive an interview."
If you even remotely look like you went to the Q&A session just to shmooze then it'll come off wrong. Don't be over eager, don't be too robotic, just be yourself, ask good questions, and seem interested. Only THEN could this help you, IMO
