Do they care where you do your research at? I am doing my research with one of my professors this semester. He is not well known and I probably will not get published. I have no research experience and think this would be a good experience. What do you guys think?

Also I am applying right now and have everything submitted. How should I update AMCAS and TMDSAS and let them know I am doing research now?

No, doesn't matter. Any experience is good as long as it's productive and meaningful in some way to you. Being published is a bonus, but not essential. I would just update the individual schools by letter or email, unless TMDSAS dictates otherwise--I honestly can't remember even though I applied just 2 years ago.
