I am supposed to start medical school in two weeks, but along with half of my class still have not heard anything from financial aid (I turned everything in at the beginning of March).

I'm concerned because I am relying completely on student loans to pay for tuition and living expenses. My parents are not going to give or lend me a dime, partly because they don't have it and partly because they don't believe it is their responsibility now that I'm out of college and "independent."

I am curious as to whether I can take a private loan of $3,000-5,000 to help me defray costs of moving and setting up an apartment (paying security deposit/first month rent) and to get by until financial aid arrives. Not getting any response from the financial aid office and now wondering if I have to defer for a year so I can work and save money. I'm freaking out and not sure what my options are!!

You can't get any loans until the financial aid disbursement occurs. It is usually the first week of school. (Take a look at the FA office website). In the meantime, you need to borrow money from family members and use credit cards. There is no way around it. Tell your family you will pay them back in full as soon as you get your loan money.

Exactly as noted above. Financial aid cannot be dispersed to you until you actually start school, and even then sometimes it doesn't come until a couple weeks in. Obviously, you must secure housing before school starts, and thus the pickle. I remember having to borrow money from my parents at the beginning of the year (and also at the beginning of the 2nd semester of M1 b/c that darn fin aid always came 2 weeks after the rent was due). After M1 I learned to save some money for the beginning of the year to avoid this lapse in money disbursement.
