I'm pre-writing my response to the "adversity/challenge that I have overcome" for the upcoming cycle.

Do you think it is acceptable to write about a moral dilema I have faced and how I grew from that experience?

Yeah, I think it is. The Case Western challenge prompt specifically gives an ethical dilemma as an example of a personal challenge.
