Advice for late DO application

So Im wanting to apply to OOS DO schools (texas resident) as I have applied within Texas and have not received any attention. My original plan was to do this next cycle when I could obtain a DO letter. Some of the schools Im interested in either require or strongly recommend a DO letter. But I have an opportunity now where a DO physician has agreed to let me shadow her and obtain a letter of rec by the end of next week. So now Im thinking that I would like to apply now to a few select schools OOS and see what happens.

3 attempts at the MCAT 25, 25 and 27 (10v, 7p, 10b)

my EC's
2+ yrs of research
hospital volunteer work, 3 months as a scribe, 30+ hours of shadowing
TA, martial arts instructor for 2+ years

currently Im getting involved in the red cross, and an animal rescue center. I plan to volunteer at a free clinic as well.

So I would like to know what schools I should apply to? Im interested in an allopathic residency particularly EM.
