This is really something that can only be answered by your employer and any sort of contracts you have signed. If you think you can handle two courses per semester and there is nothing holding you back contract-wise, then go for it. I don't think it'll be a problem as long as you only claim one course for tuition discount, but like I said, double check with your employer.
