Advice would be appreciated on my application/timeline - kind of unique situation

Hi all, this is my first time posting in SDN so my apologies for the long post/not sure if this is how it works but advice would be super helpful

To start, my situation is a little unique in that I had a near-death health scare a couple years back. I was a business major and already thinking about the switch to pre-med but the situation confirmed that being a physician is what I want to do. I just finished up my 4th year of a 5 year program, working my way through the pre-reqs as well as finishing up my business degree. Currently have a 3.91 gpa, good leadership extracurriculars, ~60 shadowing hours, ~150 research hrs and ~100 volunteer hours and what I think is a pretty good story. I'm planning on increasing hours for these over the next year but am wondering if a little expansion on this would be enough for some good schools?

Also, I was planning on working this summer as it was required for my business degree however because of COVID-19 that is no longer necessary. Instead, I was lucky enough to find remote research that I can do 40 hours a week (signed the contract last week). My problem stems from trying to figure out if it's doable to finish up my last pre-reqs next year in Spring of 2021, then take the MCAT in May, and then still apply that June to be part of the fall 2022 cohort? If I was thinking more proactively, I may have been able to take summer classes now and then finish pre-reqs in the fall and have time next spring to set aside for MCAT so I don't know if it's worth trying to get out of my research and do classes this summer instead?
