I applied to 13 DO schools, finished submitting secondarys about 2 week ago or so. I have 3 interviews so far. How many interviews does one need to ensure at least one acceptance. are there any statistics on this?

There are no guarantees. You could have twenty interviews, but if you show up to all of them with no pants on, I promise you'll have no acceptances.😀

Seriously though, just focus on being the best applicant you can for each interview.
 
If you were early, I would cite you different chances than I will now. Early in the game if you have 4 interviews, I would call it highly likely that you will gain an acceptance. At this point, the classes are starting to fill and I have no clue. You are still in good shape, and as long as you are moderately sane with stats on average of the institution you are interviewing, then I would say your chances are pretty decent.

Where are your interviews?
