after submitting your secondary, you may get invited for an interview as early as a couple weeks later or as long as several months later. you just have to be extremely patient!

Bingo. There is no rhyme or reason. It could be tomorrow, next week, or February 2005. Just be patient and try not to dwell on it too much.

do schools (who dont have online status checks) send emails or postcard to let you know if your application is completed?

how long do you suppose that takes for the adcoms?

If I remember correctly, most of my schools sent me a postcard. But not all do so, so it's your responsibility to check on your app. I think once they receive all of your items it's a quick turnaround to let you know, but as for how long I don't think anyone really knows.
