Age of EC's?

If I don't apply this year, it means that some of my EC's will be yet another year older next cycle. How much does this matter? Will my medical assisting experience be viewed less relevant if it's a year older even though it contributed to my path to medical school? I'm still involved in other EC's, but internships and stuff are a large part of my app and I'd like them to be as strong as possible if that makes sense.
