Am I a good candidate?

I am majoring in chemistry in a smaller, private school (St. John Fisher).
I have about 65 hours of shadowing experience, and plan on shadowing another 85-100 this summer.
GPA: 3.81 (science GPA is a little higher)
DAT: PAT 22, QR 22, RC 20, Bio 16, Gen Chem 21, Orgo 19, TS 18, AA 20

I will be retaking the DAT in a month to hopefully boost my bio score but I was curious how I currently stand.
 
I think you are in a good place with 3.8 GPA and 20 AA. Retaking DAT is also a good move. Try to raise that Bio score to 19, 20. I am sure you will get in somewhere.
 
I would try to retake the DAT to strive for at least a 20 on each section. Furthermore, get some recognized extracurricular activity would help like being the president of a club. At some universities, (like mine) the univ administration makes it easy for students to form a club and be the president of that club. We have to get 10 signatures from our classmates to start a club. I believe extracurricular activities are important because they show your ability to work with other people.

How much shadowing experience is usually recommended to have? And should I be shadowing many dentists? Or just a couple? Or a range of dental professionals?

40+ hours of shadowing is good. The more the better.
You should shadow a general dentist. If you have time, shadow others.
