Yes all of these letters will be sent to my undergraduate pre-health committee for a composite letter. I did have other letters that I was planning to send in before I started my newest research gig, but I didn't want to overwhelm the adcoms with too many letters.

I was also hoping for a response regarding whether or not I should include my HS hours for Habitat for Humanity. Any other experts have a chance to weigh in? @Goro @gyngyn @gonnif @LizzyM

Yup, just recently started back up again. I didn't do any hours while in college however as this volunteering was done in my home state.
